Devices counts the distinct devices heard looking for networks. One device is counted once no matter how many times it calls out.
Three things are left out. Access points and anything else that answers — if an address ever sent a Beacon, Probe Response or Association Response, it is equipment, not somebody's phone. Anything calling out on a fixed timer, like a signage panel, which is regular in a way people are not. And devices with address randomisation switched off, which cannot be told apart from equipment here.
So this is a floor, not a headcount: a device that never calls out is invisible, and one person may carry two.
Network names are what the access points here broadcast. The networks passing devices ask for are not listed.

History
—Each bar is one slice of time on its own — distinct in that slice. The figures above the chart are for the whole window, and the panel at the top is for the run so far, so the three do not add up to each other and are not meant to.
Devices — the same count as the panel above, per slice. Access points — APs heard beaconing. Probing devices — every address heard calling out, including the equipment and timers Devices leaves out, so the gap between the two lines is what the filtering removed.
Probe requests counts frames, not devices. It runs an order of magnitude higher, so switching it on flattens the others against the same scale — useful on its own, misleading beside them.
